Recipe for Kutsinta

So many people have left comments about my last post “ Yes I did It” inquiring about the recipe of Kutsinta, I decided to post it. So thank everyone for the interest and compliments in the recipe. So here it is:

Filipino Cuchinta (Kutsinta) Recipe

1 cup all-purpose flour
2 cups of water
1 tsp. lija (lye water)
1 cup brown sugar (packed)
Red food coloring

Add water to flour gradually while beating. Then mix in the remaining ingredients, plus a dash of red food coloring. Continue beating until well blended. Pour on ungreased molders (¾ full). Cover with cheese cloth and steam for 30 minutes or until done. Serve with fresh grated coconut.

Yes I did it

Yes I never thought that I will be successful in making this one of my favorite kakanin “the kutsinta”. My mom used to cook different kind of kakanin including my favorite kutsinta (cuchinta) and sell them. The other day I was craving for some kutsinta but I couldn’t buy it here since no one is selling it here. So I asked mom for the ingredients and was so eager to learn how to make it myself. I told myself that I can do it I just have to be patient and follow the ingredients. In fact I really did it on my first attempt, I realize that it was not hard to make it especially it don’t need too much ingredients. But I was a little bit disappointed though cause I don’t have a fresh grated coconut.

Honestly when I was in the Philippines I don’t even know how to cook rice. that’s why when I got married I realize that cooking is one of my passion. I must say that I am very proud of myself. Sharing you all this yummylicious kutsinta(cutchinta)….Sorry I can only share a picture…wink!

Digital Frame

I have been taking so many pictures and loading them on my computer lately. I have been sorting through them trying to pick some of them too print. My husband teases me that we would go broke printing every picture that I take with my new digital camera. With mother’s day coming, I have been trying to decide what gift to give to my mother-in-law. So now that I have found the perfect picture to print, I have been looking for a digital frame that matches. Now all I have to do is go online and buy it and everything will finally come together.

Yummy Fish

Monday, our neighbor came home from a fishing trip. He is an old retired Air Force guy and he fishes on the base. He caught so many fish that he did not like to clean them all. So he gave my husband some white perch (crappie) and my husband was more than happy to clean them. Today we enjoyed the fruits of my husband’s and neighbor’s labor.

Patio Sets

It’s that time of year for venturing outside after our Winter’s hibernation. We love to barbeque especially during the Summer months. We enjoy socializing with the neighbors while all the kids run off all their energy. So I have been looking online for patio sets. Our other patio furniture has basically died and needs a decent burial. The squirrels have just about finished off what the weather has not destroyed. They have stolen all the stuffing from the pillows. Come to think of it, we need a new BBQ Pit too!

His been naked

Meet my little Matt, he is naked here because he felt hot and sweaty. The weather outside is a little hot, so that means Summer will be here soon. Anyway, let's talk again about my baby…I let him get naked for a little while because I’m preparing to carry him outside. Do you know what happen when I started to dress him? He started crying! I was thinking that maybe he is a little spoiled and likes it cold. I was thinking what if when we go visit at the Philippines what will he do? Hmmn… he would probably complain that it's very hot and he would want to go back home.

My sister and mother live in New York now. Of course I’m sure since all my family lives there we will be traveling and vacationing to New York often. However, my sister has just moved there last week and plans to start working soon. Before she starts working, she will be wanting to explore and find Things to do in New York. Frustrated

I have been trying to get video of the baby when he is in a good mood. I get frustrated because when he smiles and tries to speak, I always miss him. I get the camera and he stops. I think he is like his dad because he is camera shy too. I will keep trying because he looks so adorable when he smiles at me with his toothless grin.

Sis is gone

My sister left yesterday to fly to New York. I will miss her. I tease her that I will have nobody to fight anymore. I know she is excited at the prospect of starting a new job. My oldest son said that he will miss his Auntie too. She had a little trouble because she was delayed at the Dallas Airport. Her flight was canceled and she had to get a seat on a plane 4 hours later. Anyway, she has made it safe and sound. Today my brother-in-law will come in from Houston with his family.

Happy Easter

Happy Easter to all my online friends. We oldest son hunted eggs at my mother-in law's place yesterday which is a good thing. I am sad because we did not get to go to church like we planned this morning. All my men in the family are fighting allergies. My husband and both son's are very congested. We arose at 6:00 am like we planned, but after a round of medicine and coughing, they basically went back to bed. I'm a little disappointed to miss the big egg hunt at church again this year for my son. Last year it was over before we could get there. It's raining anyway, so maybe this year got canceled too.
